A ver si podéis ayudarme con este término. He aquí algo de contexto:

La masa madre es una mezcla de harina y agua en la que viven, en perfecta armonía, bacterias y levaduras con la que podrás hacer tu propio pan casero (hacer clic aquí para ver todas las recetas de panes) de forma natural y con ingredientes que controlarás al cien por cien, siendo esto, una ventaja respecto a los panes industriales, y consiguiendo una calidad en tu producto, difícil de igualar. Ambos microorganismos fermentan la harina poniendo a nuestra disposición nutrientes de fácil asimilación al encontrarse estos en un estado de predigestión.

disagree Susie Rawson : sourdough is one very specific type of dough, very popular in the West Coast of the US, but doesn´t necessarily translate as masa madre and doesn´t include other types of starter doughs. There is a very wide span of breads which are not the sourdough type

Diría que aquí quieren decir 'starter', es el producto que se hace con levadura y algún líquido (normalmente mi madre usa leche creo). Aquí no se habla de un tipo de pan final (como 'sourdough' por ejemplo) creo.

starter mixture

Hola, mientras navegaba por la pagina de cocina BBC Food, encontre este término: "starter mixture".
en otras paginas, y dependiendo el uso de la masa (pizza, pan, etc) el termino cambiaba de la siguiente manera: "pizza dough starter", "sourdough starter", etc.
Ten cuidado porque "sourdough" se refiere a un tipo de pan cuya masa tiene caracteristicas particulares. Espero te sea de ayuda.
