"Once" IMO refers to the times before several republics separated , i.e. to the Soviet Union, in the country´s former size

or Motherland, if you prefer it capitalized
I'm guessing "большая" refers to the size of the territory (of the former USSR?), otherwise 'mighty/glorious' might also be worth considering

I would change "the" to "my", as suggested by Rashid Lazytech, and change the word order.

или он пошел служить уже после распада, и все равно гордо держал щит большой когда-то Родины. тогда of the once.
другими словами, в русском варианте стилистически не очень точно может быть употреблен этот оборот.
