I think product protection is the correct term, but it's a toss up as to how you render "syndicat".

Association / Friends of
Depends on whether the "syndicat" is an industry group with non-specific aims (which I don't think it is) or a lobby group with limited and very narrow objectives, in which case you could call them "Friends of AOC Plouque-lès-Bordeaux" or just "AOC XXX Lobby Group" (AOC not needing to be translated for an audience with knowledge of the wine industry, nor perhaps for a general audience either - most people know what an AOC is, see the UK broadsheets' wine pages in weekend supplements).
