I think I know what is meant, but the whole German sentence is constructed inefficiently and is confusing. I would translate the whole sentence like this: "If multiple mail servers can be allocated to a single domain, the priority determines which server will be tried first."

The way I understand it is that "mehrere" refers to the mail servers, but the issue concerns only one domain.

The sentence is a bit confusing. I would rephrase it like this:
By defining the priority, you/one can determine the priority/likelihood/probability of a mailserver being chosen, in case several ones are available under the same domain.

If multiple mail servers are available for a single domain, the priority determines which server will be tried first. Or, might it be better to be more specific, e.g.: Here you can select the mail server's priority. : Priority defines the order.Every mail server has its level of "priority". Mail servers with the highest priority will be tried first, if none of these are available then those with the second highest priority will be tried and so on...
