Translation is about communicating the meaning of the original text faithfully and concisely. It is most definitely not about replacing words. I aim to produce translations that read so naturally that no one would recognize them as such.

Japanese to English: Yakitori
Source text - Japanese
Translation - English Yakitori
Yakitori, Japanese-style grilled chicken, consists in its most orthodox form of small cubes of chicken which are mounted on skewers, salted or basted with a sweetened soy-based sauce, and then grilled. There are however a number of variations on this theme, including negitori (alternating pieces of chicken and leak), sasami (tender and lightly seasoned chicken breast), and tsukuné (balls of minced chicken). Chicken liver and skin are also popular types of yakitori. You order by giving the number of skewers of each type you want, and you can add to your order at any time. As one of Japan’s most popular dishes, yakitori is served not only in yakitoriya (restaurants and stands specializing in the dish), but also invariably in pubs, since it tends to be regarded more as a snack to be enjoyed while drinking, rather than part of a main meal. There are many yakitoriya that also offer skewers of pork and beef.
Japanese to English: Longines
Source text - Japanese
Translation - English Longines, the choice of discerning people, whatever the age
Longines watches arrived on Japanese shores back in the nineteenth century, on the wings of a reputation as one of the world’s most renowned brands, and Takamori Saigo too was the proud owner of a Longines pocket watch made in 1869. Longines’ dedication to the creation of high precision beauty has remained unchanged down through the ages, resulting among many other achievements in the world’s first quartz wristwatch, unveiled to worldwide acclaim in August 1969. Longines has continued to exert leadership in the field of quartz technology ever since.
Featuring an art deco design that wowed Paris fashion circles, and a watch face elegantly studded with diamonds, the Conquest de El Dorado, Longines’ flagship gold bracelet wristwatch, is a product of the latest technology and superb manual craftsmanship, a masterpiece of lasting beauty.
Translation - English The Mineral Resources Research Group has carried out resource assessments of stratified manganese deposits as part of its research to ensure a stable supply of rare earths. Our chemical analysis of stratified manganese ore samples from throughout Japan that are stored in the Geological Museum turned up ferruginous manganese ores that were rich in rare earth elements. Detailed examination of the forms in which these rare earth elements are present led to the discovery in an ore sample from the Arise deposit in Kochi Prefecture of a new mineral with the ideal formula NdVO4. In accordance with rare earth mineral naming protocols, this new mineral was named wakefieldite-(Nd) after wakefieldite-(Y) (YVO4), a previously reported mineral of the same group. This is the first reported discovery of a wakefieldite mineral in Japan.
