Aging in an oak barrel is a key step in the production of great wines and spirits. The wood is a true oenological tool.
The barrel serves as integrator–it preserves the characteristics of the grape variety, the terroir, and the wine’s flavor, all while harmonizing the elements for greater complexity. Oak helps to soften and subdue the natural aggressive tannins of wine.
The tight-grained oak is porous, allowing for minute amounts of evaporation and oxygenation. This exchange between the outside air, the barrel and the wine provide for rounding of tannins and developing of aromatics. The end result is a wine of finesse.

El envejecimiento en barrica de roble es un paso fundamental en la elaboración de grandes vinos y espirituosos. La madera es una verdadera herramienta enológica.
La barrica sirve de integrador: preserva las características de la variedad de uva, del terruño y el sabor del vino, a la vez que harmoniza los elementos para una mayor complejidad. El roble contribuye a darle suavidad y sutileza a los taninos del vino, naturalmente agresivos.
El roble es poroso y de grano fino, lo que permite una lenta evaporación y oxigenación. Este intercambio entre el aire del exterior, la barrica y el vino permite que los taninos se hagan más redondos y que se desarrollen los aromas. El resultado final es un vino sutil.

It has a bouquet of citrus, floral and ripe tropical fruit skins, with a slightly roasted background that reminds of cocoa and provides complexity.
On the palate, it is fresh and unctuous. The hints of citrus and roasted fruits reappear with a fine tannin that makes it a more complex wine and shows it has a long life ahead.

Source text - English Along with the potato and the tomato, one of the New World’s most significant gifts to Old World agriculture was the vine louse phylloxera. Every wine lover knows that those tiny root-sucking aphids devastated European vineyards, starting in the late 19th century.
Most wine lovers also know that all European vines now grow grafted onto largely phylloxera-resistant American root stocks. That, however, is wrong: Most European vines are so grafted, but not all. The spread of phylloxera through Europe was gradual and uneven, and pockets of phylloxera-free vines have survived in a number of areas, notably Italy and Portugal. The intermittently authoritative Oxford Companion to Wine mentions Hungary (the plain), Listel on the French Mediterranean coast, only one region of Portugal, and Italy not at all – that last an omission all too common in British writings on wine, and one of its most serious flaws.

The grinding water and the gasping wind;
But it was she and not the sea we heard.
For she was the maker of the song she sang.
The ever-hooded, tragic-gestured sea

Whose spirit is this? we said, because we knew
It was the spirit that we sought and knew
That we should ask this often as she sang.
If it was only the dark voice of the sea
