Source text - Italian Dai vini preferiti dall’alta ristorazione a quelli più venduti al supermercato. Dalle denominazioni che hanno incrementato di più le vendite a quelle che danno più lavoro. Tante top list per un unico comun denominatore: la rivincita degli autoctoni.
I bianchi autoctoni preferiti dall’alta ristorazione
Vinitaly, si sa, è anche tempo di classifiche e bilanci. Il momento in cui ci si sbizzarrisce nel dare risposte a interrogativi e curiosità maturati durante tutto l’anno, ma che solo in Fiera si svelano al grande pubblico dei curiosi. Ce n’è per tutti i gusti. Ad esempio, quali sono le regioni più presenti nelle carte dei ristoranti? Quali i vini preferiti dai grandi chef? E ancora, quali denominazioni potrebbero fare di più e quali, invece, non mancano proprio mai? Forte dei suoi tre cavalli di battaglia del territorio (Pecorino, Passerina e Verdicchio), l’Istituto Marchigiano Vini ha fatto il punto sui bianchi autoctoni nella ristorazione, con una ricerca firmata Nomisma-Wine monitor, condotta su 220 intervistati tra sommelier, titolari e cuochi, e presentata proprio in Fiera.
Le regioni più rappresentate
Il primo dato che emerge è che l’alta cucina preferisce i vini legati ai territori italiani: su 126 etichette di vini bianchi in carta, nei ristoranti top sono 106 quelli di autoctoni (contro i 64 di tutto il comparto ristorazione). Tra le regioni più rappresentate, al primo posto si piazza il Friuli Venezia Giulia (40%), seguito da Alto Adige (15%), Sicilia (9%) e Marche (7%). Poi Abruzzo, Trentino, Veneto, Campania, Piemonte e Valle D’Aosta
Gli emergenti
Tra gli emergenti, svettano Pignoletto, Passerina e Pecorino, mentre sono immancabili Falanghina, Fiano, Vermentino, Friulano, Traminer e Verdicchio. Onnipresente è, infine, il Moscato, nella maggioranza dei casi inteso nella sua interpretazione di vino dolce.
Maggior impatto lavorativo
Con un totale di 19,4 milioni di ore impiegate all’anno, the winner isil Montepulciano d’Abruzzo Doc, davanti al Puglia Igt con 16,5 milioni nella provincia di Foggia e alla Doc Sicilia con 16 milioni di giornate in quella di Trapani. Una classifica che, nelle prime tre posizioni, mette in evidenza come il settore vitivinicolo sia particolarmente importante per l’economia e l’occupazione nel Mezzogiorno, sebbene l’impatto lavorativo sia rilevante anche al Nord. Al quarto posto, infatti, si piazza il lombardo Oltrepò Pavese Doc, con 14,2 milioni di ore di lavoro, davanti ai piemontesi Asti Docg e Barbera d’Asti, con all’attivo 13,4 milioni di ore. Bisogna, invece, arrivare al sesto posto per trovare una denominazione veneta: l’Amarone della Valpolicella Docg con 13,1 milioni di “banca ore”.
Gli emergenti
Tra gli “emergenti” con una maggiore progressione di vendita a volume troviamo Ribolla Gialla(Friuli Venezia Giulia), Passerina (Marche), Valpolicella Ripasso (Veneto). Confermata la crescita del Pignoletto (Emilia), del Pecorino (Marche/Abruzzo) e della Passerina (Marche), mentre rientrano in classifica il Grillo (Sicilia) e il Cannonau (Sardegna). Ottimi risultati anche per il Chianti Docg, con quasi 10 milioni di litri per un valore di oltre 45 milioni di euro.
Le tendenze
Tra i maggiori trend da rilevare, la crescita dei biologici – una novità per la Gdo - con un +25,7% in volume per un totale di 2,5 milioni di litri venduti; e l’accelerazione dei vini a denominazione e degli spumanti

Dos vinhos preferidos pela alta gastronomia àqueles mais vendidos no supermercado. Das denominações que mais incrementaram as vendas àquelas que geram mais empregos. Tantas top lists para um único denominador comum: a revanche dos autóctones.
Os brancos autóctones preferidos pela alta restauração
Vinitaly, como se sabe, é também ocasião para balanço e classificação. O momento em que se se dilaga em dar respostas a perguntas amadurecidas durante todo o ano, mas que somente na Feira se revelam ao grande publico de curiosos. E há para todos os gostos. Por exemplo, quais são as regiões mais presentes nas cartas dos restaurantes?Quais os vinhos preferidos dos grandes chefs? E ainda, quais denominações poderiam render mais e quais não pecam mesmo nunca? Forte com seus três cavalos de batalha do território (Pecorino, Passerina e Verdicchio), O Istituto Marchigiano Vini promoveu uma pontuação
sobre os brancos autóctones na restauração, com uma pesquisa assinada pela Nomisma-Wine monitor, realizada com 220 entrevistados entre sommeliers, proprietários de locais e cozinheiros, que foi apresentada na ocasião da Feira.
As regiões mais representadas
O primeiro dado que surge é que a alta gastronomia prefere os vinhos ligados aos territórios italianos: sobre 126 rótulos de vinhos brancos na carta dos restaurantes top, 106 são autóctones (contra os 64 de todo setor).
