INGREDIENTES
-un puñado de lentejas pardina por persona
-una zanahoria
-media cebolla
-un tomate mediano
-medio puerro
-un pimiento verde pequeño
-dos dientes de ajo
-unas cuantas setas “pleorotus ostreatus” (yo las compro en el super)
-un taquito de jamón serrano por persona
-dos hojas de laurel
-una cucharadita de postre de pimentón
-aceite de oliva y sal
PREPARACIÓN
Con estas cantidades hemos comido los tres y ha sobrado una ración. Estas lentejas no es imprescindible que hayan estado a remojo toda la noche. A mi me gusta más echarlas pero vamos, que si se nos olvida no pasa nada. En la olla exprés, ponemos las lentejas con agua fría que las cubra, las hojas de laurel, la media cebolla, los tacos de jamón y llevamos al fuego.
Mientras, en una sartén mediana ponemos un chorrito de aceite y echamos el pimiento y la zanahoria bien picadita. Ahora echamos los ajos muy picaditos, y el tomate pelado y muy troceado.
Volvemos a mover y dejamos sofreír unos minutos. Incorporamos el puerro picadito y volvemos a remover el sofrito. Ahora ponemos las setas troceadas y damos vueltas para que se integren con el sofrito.
Cuando ya esté listo ponemos el pimentón, lo movemos bien para que se integre con el sofrito y todo esto lo añadimos a las lentejas que ya estarán cociendo.
Echamos sal y cerramos la olla bien. Ponemos la pirindola y cuando empiece a dar vueltas bajamos el fuego al mínimo y contamos diez minutos. Nuestras lentejas estarán listas.
Ahora abrimos la olla siempre en la pila bajo el chorro de agua fría para que salga todo el vapor.

INGRÉDIENTS
-Une poignée de lentilles par personne
-Une carotte
-La moitié d'un oignon
-Une tomate de taille moyenne
-La moitié d´un poireau
-Un petit poivron vert
-Deux gousses d'ail
-Quelques champignons "pleorotus ostreatus"/ pleurotes en huître (je les achète au supermarché)
-Un dé de jambon serrano par personne
-Deux feuilles de laurier
-Une cuillère à café de paprika
-Huile d'olive et sel
PRÉPARATION
Avec ces quantités nous avons eu à manger pour trois et il restait une portion . Ce n'est pas essentiel de faire tremper les lentilles pendant la nuit..Je préfère le faire mais bon, si on oublie c´est pas grave. Dans la cocotte-minute, mettre les lentilles dans l'eau froide afin qu´elles soient couvertes, ajouter les feuilles de laurier, la moitié d'oignon, les dés de jambon et mettre à cuire.
Pendant ce temps, dans une casserole de taille moyenne mettre un peu d'huile, le poivron et la carotte finement hachée. Maintenant nous ajoutons l´ail bien haché, et les tomates pelées et en tout petits morceaux.
Remuez et laissez frire quelques minutes. Incorporez le poireau émincé et continuez à remuer la sauce . Maintenant, nous mettons les champignons en petits morceaux et nous touillons pour amalgamer avec la sauce.
Quand c´est près nous saupoudrons le paprika, nous mélangeons bien pour qu´il s´intègre à la sauce et ajoutons aux lentilles qui seront déjà en train de cuire.
Nous ajoutons le sel et fermons bien la cocotte. Nous mettons la valve et quand ça commence à tourner, nous baissons à feu doux et comptons dix minutes. Nos lentilles sont prêtes.
Maintenant, ouvrons la cocotte, toujours dans
l´évier sous un filet d´eau froide afin que toute la vapeur sorte

INGREDIENTS
-a handful of brown lentils per person
-a carrot
-half an onion
- one medium size tomato
- half a leek
-a small green pepper
-two cloves of garlic
-a few mushrooms "pleorotus ostreatus"/ oyster mushrooms (I buy them in the supermarket)
-a dice of ham per person
-two bay leaves
-a teaspoon of paprika
-olive oil and salt
PREPARATION
These amounts served three of us and there was a portion left. Soaking overnight the lentils is not essential. I prefer to do it but hey, it does not matter if we forget. In the pressure cooker, put the lentils in cold water to cover them, add bay leaves, half an onion, the dice of ham and start cooking.
Meanwhile, in a medium size saucepan put a little oil and add green pepper and finely chopped carrot. Now we take finely chopped garlic, and peeled and very finely chopped tomato.
Stir-fry a few minutes. Incorporate chopped leek and re-stir the sauce. Now put chopped mushrooms and fold in to blend with the sauce.
When it´s ready sprinkle with paprika, stir to be blend well with the sauce and add to the lentils which should be already cooking.
We sprinkle with salt and close the pressure-cooker well. We set the valve and when it starts to spin we lower the heat to low and count ten minutes. Our lentils are ready.
Now open the pot, always in the kitchen sink under a stream of running cold water to clear all the steam out.

Lemon Curd
A British teatime favorite. This sweet, yet tart, velvety spread is heavenly on freshly baked scones, muffins, and tea breads. Another favorite is serving lemon curd on gingerbread or used as a filling for tarts and cakes. Lemon curd is so easy-to-make as all it contains is eggs, sugar, lemon juice, lemon zest, and butter.
(2) List of Ingredients and amount used:
3 to 4 tablespoons lemon zest (rind)*
1/2 cup fresh-squeezed lemon juice (4 to 6 lemons)**
1 1/2 cups granulated sugar
6 tablespoons salted butter, cut into pieces
3 eggs, lightly beaten
* Cold lemons are much easier to grate. Always grate your lemons first, and then juice them.
** Do not use the bottled lemon juice - only use fresh-squeezed lemon juice. Room temperature lemons produce more juice. When choosing lemons, look for ones that are firm, plump, and heavy for their size. Always use fresh lemons when making lemon curd.
(3) Preparation Instructions:
Remove the zest (rind) from the limes using a zester or a peeler (be careful to avoid getting any of the white pith). Juice the lemons after removing the zest.
In a medium saucepan over medium-high heat, combine lemon zest, lemon juice, and sugar. Bring just to a boil; reduce heat to medium-low and simmer 5 minutes. Add butter and stir until it has melted. Remove from heat and cool to room temperature. NOTE: Use a heavy-based, non-reactive saucepan. Stainless steel, anodized aluminum, and enamel all work well. Aluminum or unlined copper pans will react with the acid in the lemons, discoloring the curd and giving it a metallic flavor.
Beat eggs into cooled lemon mixture until well blended. Return to heat and cook over medium-low heat, stirring constantly, 10 to 15 minutes or until mixture thickens and coats spoon. NOTE: Do not let the lemon curd boil, as it can cause the mixture to curdle. Remove from heat. The lemon curd will continue to thicken as it cools.
(4) Variation and Storing the Dish:
Variation: For a Lime Curd, substitute lime zest and lime juice for the lemon zest and juice.
Storing Lemon Curd: Cover by laying a layer of plastic wrap directly on the surface of the curd (this prevents a skin from forming on the surface). Store in refrigerator for up to 4 weeks or store in the freezer for one year.

Crème au citron
Un goûter favori des britanniques. Cette crème à tartiner a un goût à la fois sucré et acidulé, cette pâte onctueuse accompagne divinement les scones juste sortis du four , les muffins et les gâteaux de thé. Un autre favori est de servir cette crème au citron avec du pain d'épices ou l´utiliser comme garniture pour tartes et gâteaux. La crème au citron est facile comme tout à faire car elle ne se compose que d´œufs, sucre, jus de citron, zeste de citron et beurre.
(2) Liste des ingrédients et quantités utilisés:
3 à 4 cuillères à soupe de zeste de citron (épluchure jaune) *
1 / 2 tasse de jus de citron fraîchement (4 à 6 citrons) **
1 tasse et 1 / 2 de sucre granulé
6 cuillères à soupe de beurre salé, coupé en morceaux
3 œufs, légèrement battus
*Le citron froid est beaucoup plus facile à râper. Dans tous les cas: d´abord râpez vos citrons, puis exprimez le jus.
** Ne pas utiliser de jus de citron en bouteille - utilisez uniquement le jus de citron fraîchement pressé . Les citrons à température ambiante produisent plus de jus. Lorsque vous choisissez des citrons, prenez ceux qui sont fermes, dodus, et lourds pour leur taille. Utilisez toujours des citrons frais pour faire la crème au citron.
(3) Mode de préparation:
Retirez le zeste (épluchure jaune) des citrus à l'aide d'une râpeuse ou d´un économe (faites attention à ne prendre aucune chaire blanche).Pressez les citrons après avoir enlevé le zeste.
Dans une casserole de taille moyenne mettez à feu moyen, mélangez le zeste de citron, le jus de citron et le sucre. Faites bouillir, réduisez à feu moyen-doux et laissez mijoter 5 minutes. Ajoutez le beurre et remuez jusqu'à ce qu'il ait fondu. Retirez du feu et laissez refroidir à température ambiante. NOTE: Utilisez une casserole à fond épais et qui n´interagit pas avec les aliments . L´acier inoxydable, l´aluminium anodisé, et l'émail sont tous bons. Les casseroles en aluminium ou en cuivre non revêtu vont réagir avec l'acidité des citrons, décolorer la pâte et lui donner une saveur métallique.
Battez les œufs dans la mixture de citron refroidie et mélangez bien. Remettez sur le feu et laissez cuire à feu moyen-doux, en remuant constamment, de 10 à 15 minutes ou jusqu'à que la mixture s´épaississe en formant une légère peau .
