Receta de Karlos Arguiñano de macarrones con bonito y queso gratinado, un plato muy popular y fácil de preparar.
Ingredientes para 4 personas
400 gr. de macarrones
200 gr. de bonito en aceite
1 cebolleta
1 pimiento verde
1/2 pimiento rojo
8 tomates (maduros)
3 dientes de ajo
1 cucharadita de azúcar
150 gr. de mozzarella rallada
Agua
Aceite de oliva virgen extra
Sal
1 hoja de laurel
Orégano
Perejil
Elaboración de la receta de macarrones con bonito
Pica finamente los dientes de ajo, la cebolleta y los pimientos y ponlos a pochar en una cazuela con aceite. Sazona.
Retira el pedúnculo a los tomates y hazles un corte en forma de cruz en la parte posterior. Escalda los tomates, pela, pica y añádelos a la verdura. Agrega una pizca de sal, el azúcar y un poco de orégano. Cocínalo a fuego medio durante 20 minutos. Escurre el bonito, desmenúzalo y agrégalo a la salsa.
Pon abundante agua a cocer, agrega la hoja de laurel, una cucharadita de sal y los macarrones. Cuécelos (el tiempo que indica el paquete) y escúrrelos.
Mezcla los macarrones con la salsa, colócalos en 1 recipiente apto para el horno y cúbrelos con el queso mozzarella. Gratínalos en el horno hasta que se funda el queso.
Decora con una hoja de perejil y sirve inmediatamente.
Translation - English Tuna Penne Recipe
Karlos Arguinano’s recipe for penne with tuna and gratinéed cheese, a very popular dish that is easy to make.
Ingredients for 4 people
400 grams (4 cups) penne pasta
200 grams (two 3-ounce cans) tuna in oil
1 green onion
1 green bell pepper
1/2 red bell pepper
8 tomatoes (ripe)
3 garlic cloves
1 teaspoon sugar
150 grams (1½ cups) shredded mozzarella
Water
Extra virgin olive oil
Salt
1 bay leaf
Oregano
Parsley
Instructions
Finely chop the garlic cloves, green onion, and peppers, and place them in a saucepan with oil to cook until soft. Season to taste.
Cut out the stems from the tomatoes and cut a cross shape on the bottom side. Blanche the tomatoes, peel and dice them, then add them to the other vegetables. Add a pinch of salt, the sugar, and some oregano. Cook over medium heat for 20 minutes. Drain the tuna, shred, and add to the vegetable mixture.
Place a good amount of water on to boil, add the bay leaf, a teaspoon of salt, and the noodles. Cook them for as long as the package indicates and drain.
Mix the noodles in with the vegetable mixture, place it all in a heat-proof baking dish, and cover with mozzarella cheese. Gratiné in the oven until the cheese melts.
Garnish with parsley leaves and serve immediately.
