How do I write this in English? The document uses the same system throughout - e.g. $100,00.00 MXN

Five hundred Mexican pesos
MXN is the abbreviation of Mexican peso, Mexico's monetary currency.
What is a little confusing to me, it is the comma, and the point on the right side, followed by two zeros.
In maths, commas are used to separate whole numbers from decimals, etc.
To me the number you need translation for is $500,00.00, hence five hundred MXN=Mexican pesos.

I think they've misplaced the comma. A quick google search shows this to be a common error. Remember that in Spanish, commas and points in numbers are used differently to how they are in English (50.000,00 = 50,000.00).
Also, a monthly salary of 500 pesos does not make any sense (the average monthly salary in Mexico is at around $33.000 MXN).

Average salary = 33,000 pesos. I went and used a comma instead of a point ;)

: Use either the symbol or the ISO code, not both. Also, the ISO code goes in front of the number, not behind.

Fair enough, and I did think that part was incorrect, but I was just trying to offer an explanation for the weird figure, not a translation.

It depends on the type of document, but I usually write it simply as 50,000.00 MXN - without the $ sign to avoid confusion with the dollar and because it becomes redundant as soon as you include MXN.
Not that that seems to bother most Mexicans, who routinely write things like "$50 mil pesos", which is wrong in more ways than one, but that's a topic for another day.
