Hi Christopher
I suspect, with no particularly excellent reason execpt your context, that "casellari" are something like the bottle partition inserts typically (though by no means exclusively of course) used in wine cases to protect bottles against scuffing and possible breakage during transit. I have hunted somewhat for these components, but have found no definite name so my proposal is based more on description than industry jargon.
Of course, I may be on quite the wrong track.

Update:
The site indicated below strongly suggests that your \"casellari\" are not cardboard inserts as I originally proposed, but rather those classic 12-position plastic crates used, generally, for returnable beverage bottles.
