This is a chapter heading-- "In Gutenbergs Stiefeln."

Does this mean "In Gutenberg's Footsteps"? And is it also a pun-- "In good hiking boots"? The chapter is in fact about both his apprenticeship as a typesetter and printer as well as his adventures trekking in Africa.

That's what I'd assume as well. The pun wouldn't've occured to me, to be honest. I don't think there is any intended.
"Footprints" only because of the "print" factor, although I admit it doesn't really sound that great.

In Gutenberg's footsteps

I would read the chapter concerned. Surely this will give you your answer. Normally one says -In Gutenbergs shoes - for In Gutenberg's place. The use of Stiefeln here suggests that someone is travelling or journeying on that same road, either figuratively or physically.
