Would we really say "packaging process" for Champagne? Why not "mise en bouteille?"

Bottling is only part of the packaging process; if you include the capsuling, labelling, putting the filled bottles into boxes or cases etc. then packaging would cover it all and might be why "conditionnement" rather than "mise en bouteille" was used.

I think that you should "stick" to packaging wich is commonly used for all types of goods because it implies the whole process while bottling may just refer to the filling of bottles.

bottling process

If in the sense of putting the champagne in bottles. If referring to 'boxing' the bottles, 'packaging process' would be fine I'd say.

agree Carol Gullidge : yes, either option: I think "bouchage" is a clue in this context. I know that packaging sounds odd when talking about liquids, but it's used, nevertheless. Here it refers to beer packaging: http://www.allaboutbeer.com/features/packaging.html
