agree Adam Warren : I think Bourth's answer is impressive, but here the emphasis is on cuts as opposed to carcase; the "de gros" of the link is not present here.

Thank you. It's daunting to post an answer that contradicts such a Kudoz veteran as Bourth!!
agree Sue Stewart-Anderson (X) : I think IanDhu is right: it's individual cuts that are concerned, rather than the carcase. I would put "cuts of meat" rather than "meat cuts" but that's your call

agree Melissa McMahon : I would say "cuts of meat" - I think "viande de découpe" is usually opposed to "viande hachée" (&, eg, charcuterie)
