First of all thank you all for your help so far; it's greatly appreciated.
A bit more info. The document is dealing with the different types of freezing methods used in the preparation of frozen vegetables. In this particular section we are in what they call a gyrofreeze context and the vegetable is spinach.

It is the preparation of the spinach to be formed into small portionable tablets.

FYI, this machine dries the extruded stuff..snack or pasta or other extruded food and dries it,f orming a crust..It is called a Cruster in French because it dries it..but in English, it is a dryer-toaster

Susan, one last point: is crusting the goal or not? If it is drying and freezing, then crusting may or may not be a desirable phenomenon. If it is the crusting to protect a frozen item, this is another meaning as Rachel found.

Sur le site de Bissy, Alpina Savoie dispose d’une installation composée de plusieurs silos de stockage, d’un moulin et d’une usine de fabrication.

Le blé dur, utilisé pour la fabrication des produits, est cultivé dans la vallée du Rhône et dans le sud-est de la France. Il est transféré des silos dans des cellules tampon du moulin. Les grains sont nettoyés et l’enveloppe est humidifiée. Ils sont ensuite broyés et tamisés. La semoule obtenue est stockée temporairement puis livrée en vrac par camion jusque dans l’usine de fabrication des pâtes.
La semoule est introduite dans une mélangeuse équipée d’un arbre à pales. De l’eau est ajoutée à raison de 30 % d’eau pour 1 kg de semoule afin d’obtenir un mélange parfaitement homogène. Celui-ci passe alors dans une vis d’extrusion alimentant un moule, sorte de filière, disposant d’une multitude d’orifices aux formes des pâtes à réaliser. A la sortie, un couteau rotatif coupe les pâtes à la longueur désirée. A ce stade les pâtes sont très molles. ***Elles sont dirigées à l’aide d’un convoyeur jusque dans un premier sécheur, appelé « croûteur », dont le rôle est de les affermir.**** Un circuit d’eau surchauffée maintient une température de 100 °C à l’intérieur du croûteur afin de chauffer les pâtes pour en extraire l’eau. Un second circuit est composé, d’une part d’une ventilation forcée assurant l’échange de chaleur entre les pâtes et l’air ambiant, et d’autre part d’un dispositif chargé d’extraire l’air rempli de vapeur d’eau. Les pâtes se solidifient et vont passer successivement dans trois sécheurs rotatifs chargés de faire décroître leur taux d’humidité. Le principe de chauffe et de ventilation de ces sécheurs est identique à celui du croûteur. Les pâtes sont transférées dans un refroidisseur qui abaisse leur température de 60 à 40 °C, puis sont véhiculées à l’aide de convoyeurs et d’élévateurs dans des silos de stockage temporaire avant emballage. Le process de fabrication dure environ quatre heures.

The French refers to what happens at the end [you have a kind of crust], the English refers to the process....

Thanks Jane! I do hesitate between your dryer (like the die typo!) and Elizabeth's dehydrator. There must be an English name for this sort of machine somewhere! I think that 'crust' is too literal for 'croûte' in this case.

though I have not found it yet, it means to crust like on top of a custard or pie
crouteur is not in the French dictionary either, but crouter is
so by extension in the English dictionary : cruster
or a crusting machine

neutral Elizabeth Lyons : The term does literally mean crust, but you crust a pie or custard by cooking, not drying and freezing as this seems to imply. If you look up the terms cruster or crusting machinery - they are not culinary. : )

dehydrator or dessicator

Given the meaning of croûteur as being that which forms a crust and reviewing the information about machines that remove water from wheat as in the link via Google, this would be the term I would use. This is a process for removing water from a product, wheat in the suggested link which is the first item on a simple Google search.

This link clearly describes a process of dehydrating the wheat to turn it into "cakes" and sent to the flash freezer and then the packaging equipment. This apparently prepares products for long term shipping and storage.

"Crusting" may be literal as I already mentioned, but you "crust" or make crusts on food items by baking, toasting, broiling not appropriate for what comes up for this process which is a multi-stage procedure, in my opinion. In fact, air-crusting is almost invariable flaw or fault in baking, for example.

On this last point, if the translation is to be clear and appropriate in English, "crusting" is a rather negative term unless it means "browning" as with breads, pies, casseroles, quiches, etc. but that would not seem applicable to the context Susan have provided. For most food prep processes "crusting" means the food is drying out undesirably and aging.

Thanks, DPC, but, that would not make sense for the wide range of foods that go through this process. For example, grains are not crusted. It is the entire process that this assembly of machines refers to, imo. : )

Sounds like it may be this - seems to be called surface freezing too;
there's various info. on the pages below.

Crust freezing, as part of combined freezing or "cryo-mechanical" freezing, is applied when food products need to be partially frozen prior to entering a mechanical freezer.
