My take would be:

The client promises to carry out a detailed annual (assets and liabilities) stocktake, notably with regard to stocks and work in progress.

Work in progress (referring to unfinished goods).

Stocks are listed as assets on the balance sheet, so it is not clear what the liabilities are in this context (unless they are creditors for any raw materials etc. that form part of the stocks held)
