odležavanje na kvascima (finom talogu)

Talog kao takav se odvaja pri prvom pretakanju. Fini talog je de facto mrtvi kvasac koji je odradio fermentaciju, a ne filtrira se kako bi se iz njega izvukle dodatne arome i kako bi vino bilo kompleksnije. Ovo se naziva još i "sur lie" metoda.
