Il s'agit d'un plancher creux dans lequel passent les cables et canalisations et à caisson, ce qui signifie que l'on peut l'ouvrir ou le surélever facilement

First of all, let me say that I am very familair with this type of thing in EN, but far less so in FR. So my suggestion is very much based on a literal interpretation of my understanding of the EN source text, and it may well be that other, more appropriate techincal terms apply in FR.
My understanding of the source text (and in the absence of more context) is that this is referring to electrical installations; of course, if this is not the case, then my suggestions will be completely inapplicable.
One of the problems with modular spaces of this type is getting electrical power (not to mention other services!) to where it is needed, given that the floor has to be kept flat and clear, and the ceiling is usually a long way up! Add to that the fact that quite heavy things may have to roll over this floor (mobile seating units, exhibition vehicles, etc.), and it's easy to see what an engineering ehadache it can become!
One very common solution is to install flush-mounted flooring trunking (aka ducts or trenches, especially if pretty large) with removable lids, in a sort of netwrok that connects with judiciously-spaced connection boxes.
In this way, power can be provided for onward connection to the nearest floor box; and often, the 'lids' or 'covers' of the florring trunking can be lifted so that other temporary cables can be laid in — for example, cables for a sound system, TV cameras, etc.
The ref. below is a tri-lingual site (basically German), but I think the FR translations seem to be fairly reasonable; in any case, the terminology can be readily checked, corroborated, or corrected from on-line monolingual resources.
