Comment traduiriez-vous "knob" dans "Small knob of fresh ginger" ?
J'ai trouvé cette définition "Fresh ginger root is sold with several protrusions that are called "knobs"."
J'ai pensé à "Un petit morceau de gingembre frais" mais je ne suis pas sûre que ça rende bien l'idée.

le mot knob renvoie bien l'image du gingembre frais tout en noeuds...j'utiliserai "petit morceau de gingembre frais". Le mot noisette est plutôt utilisé pour le beurre en français dans les recettes.

This is a typical term used for a (small) 'knob' of butter, and I think it would be appropriate for the size of a piece of fresh ginger to be used in most recipes.
Do note that I don't think 'small knob' as it is being used here specifically refers to one of the knobbly protrusions you find on fresh ginger — I've certainly never come across it used that way in EN; I'm pretty convinced it's just being used here to mean 'a small chunk'.

: Googling "noisette de gingembre" gives 67,400 results. The advantage of this term is that it gives a clear idea of size.

Thanks, J! Well, of course it depends on the recipe, but ginger is quite a pervasive flavour; this would be a typical amount in a recipe for 4 people that was not intended to be overpoweringly gingery. In FR, a 'petit pois' would be very much smaller.

: ne m'en veuillez pas, mais gousse => enveloppe, quand on ne parle pas de gousse d'ail // + ou - longiligne qui s'ouvre en deux comme pour la gousse de vanille, de haricots, etc. //c'est quand même intéressant, ce rapprochement avec Knoblauch.

Non, je ne vous en veux pas, mais puisque vous connaissez très bien la langue allemande peut être que vous allez réfléchir pourquoi l’ail, en allemand s’appelle Knoblauch.
