a vacation place for rent asks a deposit of x for possible loss due to theft or carelessness. To be returned at the end of the stay. What is the appropriate word for it?

This is definitely deposit, here (Ireland) that's what you pay before you move into rented accommodation, usually a months' deposit. Most young people rent a room in a house/flat with others and the worst time is when you move in first, because you have to pay a month's deposit and a month's rent in advance. They get it back when they leave, assuming everything is in order. I think you were also asking what it is in German, it's "Kaution".

By the way, I\'d be inclined to leave the word structure as is (i.e. a deposit of Euro xx)

agree LoriG : just for the record, in Australia we also call it a 'bond' - I guess it's a question of localization so security deposit is the most appropriate term for Europe

comment on "caution money"

Hi there. Not an answer but just an explanation.
Having mentioned "caution money" above I thought I should explain.

"Caution money" is generally used for the extra payment (repaid if not used at the end of their course) that students make to cover breakages, loss, refurbishment etc..when they rent a property/halls.

Most Google results give university/college websites, but there are a couple of holiday sites which set deposit against caution money:

"Bookings will only be confirmed on receipt of a booking form accompanied by a net payment of a deposit of 33% of the cost. The balance is payable 6 weeks before the date of arrival.
Deposits are not refundable in the event of cancellation. Clients are advised to take out adequate holiday insurance to cover this eventuality.

On arrival caution money of €300 is payable for possible damages. Where there is no damage this sum will be refunded at the end of your stay."
