French to English Tech/Engineering Wine / Oenology / Viticulture winemaking
Can anyone out there who knows something about wine making explain what the word « montée » is doing at the end of this extract ?

« La pression, en général, est définie après une heure de pressurage sur le jus qui coule en premier, l’égouttage de la première pression à 200 grammes, je vais à 500 grammes au maximum dans les millésimes 1999 et 2000. J’ai raccourci mes pressurages et j’ai monté en dernière pression à 1Kg500 au maximum sur un programme de 2 heures 30 car les derniers jus montent en potassium en PH avec des saveurs végétales et chutent en acidité et une montée .»

Is it possible that the "et" was mistaken for"en" which would give "(les jus) chutent en acidité en une montée".

incorrect transcription?

I would suggest that this is a problem of transcription from what is apparently an audio interview. "... chutent en acidité et en ???" seems more likely, though its anyone's guess what ??? might be.

I agree that this is a fault in transcription - "en une montée" - rather than "et" - the producer is describing the effect on the grape juice of increasing pressure over a fixed period of time - "une montée"
