Sorry I was in at the deep end yesterday.
I hadn't entered an answer earlier because I'm not at all sure about the terms you'd use in English.
Worse still, reading the question again has raised doubts as to the Spanish meaning itself:
Now I'm under the impression that 'perfo' here might also be an engine mapping set-up, probably along the lines of "high or maximum performance", which I would take to be the mapping used when the car is meant to go full-whack.
Yes, their are different maps, another for example is a 'fuel-saving' map, used especially when there's a pace car out and competitors don't need or want to be guzzling fuel; or when your car's running short on fuel in the final laps of a race and you'd lose too much time if you pit-stopped.
What adds to this notion is the lack of an article in front of "perfo". See how this reads differently:
deberíamos estabilizar los mapas de arrancada y perfo
deberíamos estabilizar los mapas de arrancada y LA perfo
This first (your text) seems to imply that this perfo is a type of engine mapping, whereas the second would seem to imply that it's something completely different.
Hopefully you'll find more clues in your text.
Finally, another idea:
