According to "The Oxford Companion to Wine" "encépagement is the "widely used French term for the mix of cépages, or vine varieties, planted on a particular property. " Hence is is the mixture of varieties on an estate . (For example 60% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot)
