English to Tamil: Translation work done earlier - Addendum to employment order

The compensation rate to be earned for Management-approved hours worked in excess of a normal workweek is time and a quarter of the base salary. Unapproved overtime is not allowed and will not be compensated.
The work performed shall be in accordance with the position title in the employment contract and other duties as required. The location of the work may change at the Company’s discretion within Kuwait.
If the employee was hired in Kuwait, Kuwait is considered to be the country of origin.
Employee shall be housed in shared Company accommodations or shall be provided with an allowance or commensurate pay, at the Company’s discretion. The Company will not provide meals. It is agreed that the compensation in the employment contract is sufficient to cover the cost of meals and all other life support.
Employee may be terminated in accordance with Kuwait labor law. Reasons include, but are not limited to, divulging company confidential information, mistakes that result in significant losses, employment obtained through cheating or fraud, committing certain crimes, committing an act against public morals, assaulting a colleague, breaching any obligations imposed by their contract or the law, repeatedly violating instructions, excessive absences, and an inability to perform the work.
Employees may seek resolution of a dispute through their chain of command within the Company. Final decisions may be appealed by filing a complaint with the Kuwait Ministry of Social Affairs and Labor.
Employees sponsored by another party are responsible for the actions and costs in maintaining that sponsorship, and for the sponsor’s continued authorization to allow the employee to work for the Company.
Employee passports will be held by the company for safekeeping and to assist with employment formalities. This is not intended to restrict the employee’s ability to travel or leave the job. The employee may have their passport returned within one business day by contacting Human Resources.

English to Tamil: Recipe - Zafrani Dum Biriyani
Source text - English Zafrani Dum Biriyani
( a saffron flavored rice delicacy)
Ingredients : 1 kg mutton, cut into big pieces
5 cups basmati rice
4-5 medium onions, sliced
3-4 medium tomatoes, chopped
12 large green chillies, ground into a paste
2 tablespoon garlic paste
1 ½ tablespoon ginger paste
5-6 (1” piece) chinnamon sticks
4 green cardamoms
4 black cardamoms
10-12 cloves
1 teaspoon red chilli powder
1 teaspoon garam masala powder
1 cup chopped coriander leaves
½ cup chopped mint leaves
1 cup curd 2 tablespoon fresh cream, whipped
½ cup milk
1 tablespoon lime juice
A few strands of saffron, dissolved in 3 tablespoon of milk
1-2 tablespoon ghee/oil
Salt to taste
Number of servings 25 ( 1 cup per serving)

Roast the mutton on both sides in a 24 cm high open vessel on medium heat . Add the garlic, ginger and green chilli pastes. Fry for a few minutes and add the tomatoes. Cover the vessel and cook
In the meanwhile, preheat a 16 cm handled vessel on medium heat. Add 1 tablespoon of ghee/oil and drop in 2 cinnamon sticks, 2 green cardamoms, the sliced onions and fry. Once the onions turn golden brown, mix into simmering mutton. Add the whipped curds, chilli powder, coriander leaves, mint leaves and salt to taste. Stir in the lime juice. Cover and cook for 30 minutes till the mutton is tender. Do not dry up the gravy.
For preparing the rice, pour 8 cups of water into a suitable unit. Add 2 tablespoon of slat, 1 teaspoon of ghee/oil and the remaining whole spices. Following the method given under general guidelines for cooking dehydrated foods, cook the rice for 8-10 minutes till 3/4ths done and the moisture is dried up. Spoon the rice into a flat dish, cool and moisten with ½ cup of milk.
Once mutton is cooked, spread the rice over the mutton and sprinkle a pinch of garam masala powder all over. Pour in the saffron milk and dot ith a little ghee. Cover and place on low heat for some time. Remove from heat and keep covered for a while. Stir and serve with raita of your choice.

செயல்முறை
ஒரு அகண்ட பாத்திரத்தில் (24 செ.மீ உயரம்) மிதமான அடுப்பு வெப்பத்தில் கறியை நன்கு இருபுறமும் வறுக்கவும். அதில் பூண்டு, இஞ்சி, பச்சை மிளகாய் அரைசல் சேர்க்கவும். சில நிமிடங்கள் நன்கு வறுக்கவும். இதனுடன் தக்காளியைச் சேர்க்கவும். பாத்திரத்தை நன்கு மூடி வேக வைக்கவும்.
இதனிடயே, வேறு ஒரு பாத்திரத்தில் (16 செ.மீ உயரம்) மிதமான வெப்பத்தில் 1 மேஜைக்கரண்டி நெய் அல்லது எண்ணெய் ஊற்றவும். அதில் 2 இலவங்கப்பட்டை, 2 பச்சை ஏலக்காய், நறுக்கிய வெங்காயத்தைப் போடவும். வெங்காயம் பொன்னிறத்தை அடைந்தவுடன், எல்லாவற்றையும் கறி வெந்து கொண்டிருக்கும் பாத்திரத்திற்கு மாற்றவும். நன்கு கலக்கிய தயிர், மிளகாய் தூள், கொத்தமல்லி, புதீனா மற்றும் தேவையான அளவு உப்பு சேர்க்கவும். இத்துடன் எழுமிச்சை சாறைச் சேர்க்கவும். பாத்திரத்தை நன்கு மூடி 30 நிமிடங்கள் கறி மிருதுவாக வேக விடவும். பாத்திரம் காய்ந்து போய் விடாமல் பார்த்துக் கொள்ளவும்.
இன்னொரு பாத்திரத்தில் 8 கிண்ணம் அரிசியைப் போட்டு அத்துடன் 2 மேஜைக்கரண்டி உப்பு, 1 தேக்கரண்டி நெய் அல்லது எண்ணெய் மற்றும் மீதம் உள்ள பொருள்களைப் போடவும். அடுப்பில் வைத்து ¾ பாகம் வரை வேக விடவும். (காய்ந்து போக விட வேண்டாம்). பிறகு மொத்தத்தையும் ஒரு அகலமான தட்டில் பரப்பி நன்கு கிண்டி விடவும். அத்துடன் ½ கிண்ணம் பால் சேர்க்கவும்.
கறி நன்கு வெந்தவுடன் சாதத்தை கறி இருக்கும் பாத்திரத்தில் போட்டு அதனுடன் மசாலா தூள், குங்குமப்பூ தூள், சிறிது நெய் சேர்க்கவும். பாத்திரத்தை மூடி மொத்தத்தையும் சிறிது நேரம் இளஞ்சூட்டில் இருக்க விடவும்.
சிறிது நேரம் கழித்து அடுப்பில் இருந்து இறக்கி வைக்கவும். மூடியைத் திறந்து நன்கு கலக்கவும்.
