In Spanish, the colloquial term for septo (septum) is tabique, e.g. "tabique nasal". Here, I'd use partition.

Septum:
1. (anatomy) A wall separating two cavities; a partition; as, the nasal septum.
2. (botany) A partition that separates the cells of a fruit.
3. (mycology) A partition that separates the cells of a (septated) fungus.

You could also use "dissepiment", but I don't think it's the right register in this case, as the idea is to explain what the septa are, i.e. the white ribs inside the pepper that you normally remove.

segments

The interior of the fruit is segmented, so we tend to talk about the segments rather than their "walls" per se, although that is indeed what they are.

And 'partition' and 'segment' are partial synonyms...

neutral Robert Carter : But the septum is not the same as a segment, it's what divides one segment or seed-bearing section of the fruit from another, a membrane. In peppers and chillies, they recede as the fruit grows, leaving those pale ribs.
