Ribollita, traditional Tuscan bread and vegetable soup
Ingredients for 6/8 persons
4 tablespoons olive oil,
1 red onion, chopped,
1 leek, white part only, chopped,
1 garlic clove, chopped,
4 carrots, sliced,
4 courgettes, sliced,
One-quarter Savoy cabbage, shredded and chopped,
1 bunch of cavolo nero,
1 small bunch celery, shredded and chopped,
4 potatoes, peeled and cut into cubes,
1 cup green beans, cut into bite-size pieces,
2 cups of Tuscan cannellini beans
2 tablespoons coarse sea salt or kosher salt,
4 tablespoons tomato paste,
½ kg stale Italian bread, sliced.
Soak the cannellini beans overnight and then cook over a low heat for 1 to 1½ hours. Purée half of the beans.
Heat the olive oil in a large pot and fry the onion and leek together over a low heat until browned. Add the garlic and sauté for 1 minute. Add all the remaining vegetables. Season with sea salt and stir to mix in the onions and leeks evenly. Cover and cook for 20 minutes or until the vegetables have reduced in volume by half. Stir again and cover with water to the top of the pot. The more water you add, the more broth you will have with the soup. Bring to the boil and then lower the heat. Add all of the cannellini beans, then add the tomato paste and stir to dissolve.
Cover and cook the soup for 1 hour. Add the stale bread and leave overnight.
The day after reheat, or “re-boil” the soup (Ribollita means re-boiled in Italian), stirring well to break up the bread slices. The soup should be thick enough to eat with a fork! Serve with the traditional drizzle of extra virgin olive oil on top.
Tagliata con rucola e parmigiano, slices of beef steak with rocket and parmesan cheese
For this dish, in Tuscany, steaks are used from the famous white Chianina cattle, native to this region and greatly prized for their deliciously tender and flavoursome meat. To replicate this, you will need to buy the very best T-bone steak you can find and have your butcher cut the steaks quite thick and weighing around 400-500 grams each (or 1 pound) to serve two people. Take the meat out of the refrigerator about two hours before cooking.

Extra virgin olive oil
Fresh wild rocket (rucola), about ½ cup per person.
Parmigiano cheese, approx 20g per person
Sea salt and freshly ground black pepper
Chopped rosemary.
Heat a stove-top grill or bring the wood-fired grill or barbeque to the “glowing embers” stage. Do not cook while flames are still high. Seal the steaks at high heat for about 4-5 minutes on each side, then remove to lower heat and continue to cook for about 5-7 minutes for medium rare. The meat should be well-browned (not burnt) on the outside, but still pink and juicy inside.
Transfer steaks to cutting board and leave to “rest” for a minute while you prepare the plates. Place a small pile of fresh rocket on each warmed plate and pare fine slices of the Parmigiano with a cheese plane or vegetable peeler. Slice the meat across the grain into slices (1-1,5 cm thick) and arrange slices of meat on top of each pile of rocket with a few shavings of Parmigiano. Serve immediately, dressed with chopped rosemary, freshly ground sea salt and black pepper. A delicious and very traditional addition would be a generous drizzle of the best extra virgin olive oil you have. The best meat also deserves a great red wine – we would suggest a rich Chianti Classico Riserva or one of the fantastic “Super Tuscans”.
Rose chick-peas soup with fresh local olive oil
Ingredients for 6/8 persons
8 tablespoons olive oil,
1 onion, chopped,
1 garlic clove, chopped,
1 carrot, sliced
several leaves of sage, chopped
2 sticks of celery, sliced,
2 cups Reggello rose chick-peas
2 tablespoons coarse sea salt or kosher salt,
1 kg Tuscan bread, sliced and toasted
Put the Reggello rose chick-peas in lukewarm water and soak overnight.
Then boil together with the salt, garlic, carrots, celery and sage for 2-3 hours over a low flame.
Remove from the heat and separate the chick-peas from the rest.
Mash half of the chick-peas together with the chopped onions and celery.
Mix together all of the chick-peas and serve with two slices of toasted Tuscan bread, adding fresh local olive oil and freshly ground black pepper to finish.
