РЕЗЮМЕ
Извършен е анализ на мастнокиселинния състав на кефир на 24-ия час от производство, получен от козе мляко на Българска бяла млечна порода кози и кръстоските ѝ с Англонубийска и Тогенбургска за лактационен период. Установено е, че наситените мастни киселини (НМК) се понижават от млякото в кефира и при трите партиди с 1.93 g/ 100 g продукт за ББМ, с 1.84 g/ 100 g продукт за ББМхТГ и с 0.98 g/ 100 g продукт за ББМхАН, а мононенаситените мастни киселини (МНМК) и полиненаситените мастни киселини (ПНМК) преобладават при партидите от ББМ породата. Есенциалните мастни киселини омега-3 и омега-6 са с ниски стойнсти в проучваните образци. Стойностите на липидните индекси сочат за добре балансиран мастнокиселинен състав на козето мляко и получените от него продукти. Атерогеният индекс и в трите партиди кефир (2.20; 2.25; 2.47) е по-нисък спрямо изходната суровина (2.48; 2.54; 2.68), което ги определя като по-здравословни по отношение съдържанието на липиди. Данните за наситените мастни киселини в проучваните кефири на 24-ия час от производство варират от 3.40 g/ 100 g продукт при ББМ до 3.83 g/ 100 g продукт при ББМхТГ от където следва, че се отнасят към продуктите с високо съдържание на наситени мастни киселини и ниско съдържание на транс мастни киселини (0.9 g/ 100 g продукт), съгасно Регламент (ЕО)№ 1924/2006.

SUMMARY
An analysis was conducted on the fatty acid composition of kefir at the 24th hour of production, obtained from goat’s milk of Bulgarian White Dairy (BWD) breed and its crossings with Anglo-Nubian (AN) and Toggenburg (TG) goats during the lactation period. Saturated fatty acids (SFAs) were found to decrease in the milk in all three kefir batches with 1.93 g/ 100 g product for BWD, 1.84 g/ 100 g product for BWDxTG, and 0.98 g/ 100 g product for BWDxAN, whereas the monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs predominated in BWD batches. The essential fatty acids, such as omega-3 and omega-6, had low values in the studied samples. The values of the lipid indices indicate a well-balanced fatty acid composition of goat's milk and its products. The atherogenic index in all three batches of kefir (2.20; 2.25; 2.47) was lower compared to the raw material (2.48; 2.54; 2.68), which defined them as healthier in terms of lipid content. The data on saturated fatty acids in the studied kefir batches at the 24th hour of production varied from 3.40 g/ 100 g product for BWD to 3.83 g/ 100 g product for BWDxTG, whence they refer to products with a high content of saturated fatty acids and low content of trans fatty acids (0.9 g/ 100 g product), according to Regulation (EC) No. 1924/2006.

I’ve been working as a
freelance English-to-Bulgarian translator since 2006. I chose this as my
profession because I like the sound of the English language.
When I was a child, I loved
reading books. After that, my fondness for books was transferred to reading
books in English. At the university, I was sitting in the library amazed by the
beauty of English. That’s how my dream to become a translator appeared.
I have professional
translation experience in the Agricultural field and previously translated more
than 1000 pages of instruction for agricultural machines. For 12 years I
translated more than 5000 pages of scientific papers published in the Journal
of Mountain Agriculture on The Balkans – a bilingual international open-access
web-based scientific journal.
My hobbies are related to psychological studies and
methods for personal growth, so I’ve been a consecutive translator for some
seminars.
