Source text - Polish For this purpose, the hydrothermal decomposition of soybean protein in subcritical water was investigated as a batch process and the effects of the primary reaction parameters, i.e weight ratio of the reagents, temperature (Tr) and reaction time (tr), on the degree of protein conversion were determined. Under the chosen experimental conditions, subcritical water acted as solvent, reagent and catalyst. The yields of the products of hydrothermal decomposition of soybean protein – the liquid fraction and the solid residue – were determined. Their composition in the liquid fraction was studied in order to determine the amino acid yield and profile, the dry matter content and the total organic carbon (TOC) content, as well as the distribution of nitrogen contained in soybean protein between the liquid product fraction and the solid residue.
Translation - English Celem pracy było zbadanie przebiegu hydrotermalnego rozkładu białka sojowego, w wodzie w stanie podkrytycznym, w reaktorze okresowym oraz określenie wpływu parametrów reakcji: stosunku masowego reagentów, temperatury przemiany (Tr) i czasu jej trwania (tr), na uzyskiwany stopień konwersji białka. Hydrolizę białka sojowego prowadzono bez udziału katalizatora, stosując wodę w stanie podkrytycznym jako rozpuszczalnik, reagent i katalizator. Określono wydajność produktów hydrotermalnego rozkładu białka sojowego- frakcji ciekłej i stałej pozostałości. Zbadano także ich skład, wyznaczając we frakcji ciekłej wydajność uzyskiwanych aminokwasów i ich profil, zawartość suchej masy i wydajność węgla organicznego (TOC) oraz dystrybucję azotu zawartego w białku sojowym pomiędzy frakcję ciekłą produktów i stałą pozostałość.
