This one is giving me trouble as well. As far as I know, both these concepts are translated into English as "knowledge". Although I'm quoting the same sentence, the two concepts appear together in the same context throughout the document.

Recuperación de *conocimientos, saberes* y experiencias de las personas jóvenes y adultas, en relación con el tema de interés, mediante actividades como relatos y anécdotas, preguntas directas, escritura de historias, planteamiento de problemas y otras más.

Conocimientos = technical knowledge, theory
saberes = practical knowledge, know-how
