If the text is about a specific time of year or event, how about:

"based on the traditional pig slaughter" / "on the Matanza, the traditional pig slaughter"

I think adding the word "traditional" makes it more culturally acceptable.

Until a few years ago nearly all families living in the country had one or two pigs, which they butchered in winter (December or January). The matanza, or traditional pig slaughter, was a festive occasion when many of the perishable parts of the pig were eaten: blood, ribs, snout, etc.).

This would fulfill your desire to avoid "slaughter". I would argue that in the end it is a "country" practice anywhere in the world (where pigs are eaten) and it would be best to push your squeamish city readers to accept a culture where the slaughter of animals is a normal activity.

You can use the Spanish term as a euphemism. I think there is no way around the fact that the pig gets it, just like bullfights are not circus acts. In Spanish, this slaughtering of the pig is known as the "matanza", and is still very much celebrated in Spanish villages to-day, with fun-loving fiestas, free-flowing wine, and much rejoicing.

Thanks, eski. Calling it a Pig Fest would be one way to gloss over the violent part.
