Important In the Canaries, where cherne is a classic dish, it is NOT sea bass, and if you put that on a menu customers are likely to complain when they see what they get. Nor is it really a grouper, though that's a very broad term. It's wreckfish (Polyprion americanus), which doesn't sound very appetising to the uninitiated, so I recommend the alternative name stone bass.

Sea bass and groupers are very closely related, and it could be either or both depending on who's talking.
