'Tres Jotas' Iberian mountain ham

As María says, Tres Jotas is a highly esteemed brand. 'Ibérico' because it comes from Iberian (Spanish) pigs, a local race. For 'mountain ham', see the Wikipedia article on 'jamón serrano'.

Though salt is used at the start of the process, what is most typical of 'jamón serrano' is that it is air cured for several months. See the Wikipedia article. Recently I was in a part of Spain near Granada where the hams are still cured in drying sheds (secaderos) in the cold air of the mountain villages.

I see no reason to put the brand name in quotes. As far as I've seen "Ibérico" is generally translated "Iberian".
