ну, можно mating, если coupling не нравится
Хотя, я помню использование именно этого глагола (и герундия) в смысле сопряжения в оригинальных текстах по IT/Telecom

Т.е coupling - это не простое подключение одного прибора, цепи, кабеля и пр. к другому, а обеспечение соответствия всех контактов и правильной передачи сигналов.
