I tend to agree with Jim Davis's choice 'delete'
For a pop-up window cancel=annullamento
For a keyboard stroke delete=annullamento (there is no cancel on a US PC or MAC keyboard)

Really difficult to know here. When I have done these manuals, what you need is a working version of the software to see how it works.
However, where you have a "Canc" key on an Italian keyboard, you have a "del" key on an English keyboard for "deletion". So this is right if it is the computer part. But if it is about a banking/accounting function, then it could be, reversal, write off or who knows.

You could be right. I was focusing on Anita's cancellation. Not that Microsolft are renowned for the quality of their localisation.

undo item/undoing

The term "undo item" gives 775 Google hits. Here is an example of its usage:
