Secondo Wikepedia si tratta di: Il mosto muto è un mosto a cui è stato aggiunto anidride solforosa allo scopo di bloccarne la fermentazione. Viene detto "muto" proprio per l'assenza del gorgoglìo tipico del processo fermentativo.
Sul Forum ho trovato la traduzione di Mosto Muto Desolforato > Desulphurized Must ma chi la proponeva scriveva di non sapersi spiegare quel "muto". Visto che nella stessa sezione ho anche un paragrafo sul Mosto Desolforato mi viene da pensare che debbano esistere terminologie diverse. Voi che dite? Come tradurreste?

quindi sono differenti, si va bene lascia decidere il cliente ci mancherebbe, si Mosto Desulforato" con "Desulphurized Must, non però questa traduzione per mosto muto, anche perché come hai detto anche tu poi ti trovi nella sezione mosto desulforato..

| Ciao Elena, non sono sicura di aver capito. Non ci sono corrispondenze con "mosto muto" o con "mosto desolforato"? Per il momento ho messo "preserved must" per "mosto muto" e credo lascero' decidere al cliente se preferisce una delle altre due opzioni indicate da Isabelle (Muted must e SO2 added must). Mentre ho tradotto "Mosto Desulforato" con "Desulphurized Must". Che ne dici? Sei d'accordo? |

I think desulpherized must is safer. As you say the mute part is simply a reference to the must being 'still'.

I'm not sure though, as in the section related to "Mosto Desolforato" which I translated as "Desulphurized must" the description provided is the following: Mosto Desolforato Prodotto ottenuto dalla desolforazione di mosto precedentemente addizionato di anidride solforosa per inibirne la fermentazione. Viene utilizzato per la dolcificazione di vini e quale base per la preparazione di vini frizzanti e spumanti. It seems to me that "Mosto muto" and "Mosto Desolforato" are two different things. Do you agree? |
