I think Yaiza has the right idea but perhaps "nitrogen purge" or "flush with nitrogen" are more common expressions. I think the point is often to displace oxygen.

It would be convenient to have more details about this equipment such as where it is placed, or at what point of the workflow it is used. Nevertheless, I believe "spiazzamento con azoto" refers to displacement by Nitrogen injection: You inject the gas in order to force other fluids to move or displace.
