Εφεσείοντες - Εναγόμενοι

Greek to English Law/Patents Law (general) Appeals Procedure
In the verdict of the Cyprus Supreme Court that I am dealing with, the appellants are referred to as this, and the other side are referred to as Εφεσίβλητοι-Ενάγοντες. I don't know whether in an equivalent appeal in the English courts we would talk about Appellants-Defendants and then Appellees-Plaintiffs, or something quite different.

Caution After reading your description I tend to believe that one of the parties involved is the ones submitting an appeal (appelants) against the other party (which for this case is the APPELLEE or respondent or defendant) but such second party must have -prior to the appeal-submitted a lawsuit against the first party (thus the appeal). So imo the second party is named "Appellee-Plaintiff" as you noted yourself and not appellant - defendant.

If you google it, you will see that this is a valid way of expressing the situation in English as well,
it is used very often in US case law - I don't see why it would be wrong to use it when the appelant (case tried in the second degree) is the defendant of the case tried in the first degree.
It simply lets everyone know who the appelant is, is it the defendant or the plaintiff of the case in the first degree? And this is very important to know...

appellants (= the plaintiff) - defendant (= ο καθ ου, ή εναγόμενοσ)

ο εναγόμενος στα αγγλικά μπορεί να είναι plaintiff (in civil law), a petitioner ( in a divorce case ) and the prosecuting party ( in criminal law).
