Have found "operating spheres" in one dictionary but am trying to avoid using the word "operate" in any way as this might be misleading in a hospital context.
Would perhaps simple "hospital departments" work here or is this to vague? All suggestions welcome!

Two options, one of which *might* work if your client (as your question suggests) doesn't do wards, operating theatres and other patient areas.
Quite a few Google hits for both, covering everything from laboratories and laundries through to power generating and heating facilities.
Hmmm - that makes me think: perhaps something with "facilities" could be another option?
