As I understand it, Orderzusatz refers to the further description of a trade as "fill or kill", etc - but what does the financial world call this in English?

There's no uniform term covering all markets/market models, but "order restriction" is pretty much established. Your assumption that this would refer to FOK/IOC is correct; other restrictions include "MOC" (market on close) or "OCO" (one cancels the other - when placing contingent orders).
Note that this refers to *orders*, not *trades*.
