Talking about the differences between mattresses with removable covers and those with non-removable ones. I can't make head or tail of "Montagereißverschluß", other than that it's a type of zipper. Of course, I've looked up things in Google like "assembly zipper" and "mounting zipper", but have found nothing conclusive. TIA for any light you can shed on this very strange term.

I think it has to be made clear that this zip is only for the assembly of the mattress.

You're right that the latter mattress is one whose cover is not removable, hence the zipper is not meant to be used for unzipping. It was just installed by the manufacturer to facilitate putting the cover on. I'm afraid there is no real equivalent term in English. Hope this helps.

It might be okay to call it (as you described) non-removable (mattress cover) zip(per) if it really is not removable.
According to one German reference below, sometimes these

top- or bottom/one-sided cover zippers
(that's another way to call them)

can however be removed albeit with some difficulty.
Then you would have to emphasize the assembly bit somehow:

mounted/installed/ built-in (mattress-cover) zip(per)
