This is from a text on food and wine pairing. I can't seem to get to grips with the following sentence, mainly due to uncertainty as to the use of "milieu". Any suggestions as to the meaning of "...ce milieu de fraîcheur entre..." in context? Thanks in advance for any help...

Hi, I tend to see it the same way as Kashew. Even if it were setting or middle ground, I think that this option could cover it well in English, whilst sounding natural.
For example: the play between the freshness/crispness of the fruit...
Otherwise, as a second option, I would change it for another word such as: combination, mixture or even note.

Maybe I've misunderstood why Philip is having trouble with the sentence. For me, it's not just the word "milieu" but "milieu de fraicheur", so couldn't we try using "crispness"? It's used a lot, especially with white wines.

| Sorry, just getting back to this question now. This is the crux of my question I think - is 'milieu' being used in the sense of 'setting' or of 'middle'? To me the use of 'entre' suggests the latter, although I'm surprised none of the answers (until this one) saw it that way, so maybe not... |
