remark I know that gagner du temps means to save time, however, I can't seem to make sense of it in this context.

I suspect these are instructions to moderators or speakers. In which case, they are probably saying "don't spend too much time on.....to avoid covering the same ground in too many different workshops. Working, I suppose, on the assumption that this is ground that will be covered elsewhere.

An alternative explanation (but you context should help you in seeing which, if either of these, is right) would be.

One way of saving time would be to present the details of each product(in the general part of the proceedings) so that each workshop doesn't have to address this issue in its part.
