My reason for questioning the accuracy of the other answers is simply that 'préparations culinaires' does NOT ONLY mean 'food preparation' --- a 'préparation' is often something like a cake mix, for example.

So I think they are most likely talking here about the hygiene risks associated with "the production of food mixes" --- the problem is that we use different words in English to describe different types of 'préparation' in French; so you really need to know more context, in terms of what these 'préparations' are meant to prepare. But 'mix' is a nice general word for things like cake mix / gaucamole seasoning mix / mix for couscous.

If you could give us the context, in terms of what kind of products this firm specialisies in, then we might be able to come up with something more accurate; but DO beware of this possible 'faux ami'!
