I have a table relating to food content/preparation etc.
"Proteïn.......Marquant......Mode Opératoire......Temps de Cuisson"
In all of the examples in the table, the "marquant" column contains vegetables. Other than heading the column "vegetables", how else could I translate "marquant",

I am not sure whether this is the correct term, but my (old) Larousse Gastronomique defines "marquer" as "Preparer un aliment avant de le mettre en cuisson" and further cites another definition, "Mets tout apprété que l'on met dans une piece de batterie et que l'on n'a plus qu'à faire cuire."

So, given the context, this would seem to be a list of all the items that are to be "prepped" before being eventually assembled and cooked in the final dish. And perhaps it is only "accompaniments" - ie the veg that go with the meat (protein) - that are prepped in this kitchen because the meat portions arrive already prepped or are simply dealt with as a separate category in the kitchen (eg. different storage, prep area)...

So there may be a proper 'industry' term for this, but I'd wager this is the rough sense.

brand

In the food industry, brand is very important. as you say, that vegetables are mentioned, the brand or the make that is mentioned here may perhaps be those grown using organic manure, which improves the quality of vegetable as regards their size,texture and taste. "brand" may be replaced by "significant" as it is more relevant in this context.

chunk

In a puree, the 'marquants' are little pieces of vegetable not pureed, I suppose to look attractive and add colour to the dish. Not sure what you would call this in English, but "chunks" seems reasonable to me...

agree Anna Quail : They are much too fine to be called 'chunks', but you're absolutely right about what they are. I'll post a few references to corroborate this.

I had already thought of 'ingredients' as a solution to your title problem, but that doesn't translate 'marquants' as such. Maybe 'additional ingredients' would work for you.
