I know moelle de boeuf is beef marrow but what is "aller et retour" on a menu? (listed in "les plats" section)

Aller et retour à la moelle de bœuf, salade de roquette, parmesan, frites
Noix de veau, jus à la sauge, polenta aux champignons
Filet de daurade royale artichauts breton au vinaigre de riz et baies roses.

I think it means that the steak was just "shown the pan" - although in your context it it not really clear wthat it is that is briefly cooked.
