I know moelle de boeuf is beef marrow but what is "aller et retour" on a menu? (listed in "les plats" section)
Aller et retour à la moelle de bœuf, salade de roquette, parmesan, frites
Noix de veau, jus à la sauge, polenta aux champignons
Filet de daurade royale artichauts breton au vinaigre de riz et baies roses.
Thanks to everyone - you are always very helpful :-)

Rare steak with beef marrow
I think it means that the steak was just "shown the pan" - although in your context it it not really clear wthat it is that is briefly cooked.

: Clever interpretation! Would "seared" be a possibility? Can't help much with meaty questions as I'm vegan! / http://www.saveursdumonde.net/ency_6/gibier/bison.htm Servir saignant: un aller et retour suffit.
