Salmi of duck

A col-vert is a common wild duck with a green head (mallard). Salmi is a way of cooking game or fowl. First it is roasted then cut into pieces and stewed with wine to make a dish with a highly distinctive flavour.

Worth trying by the way.

roast mallard duck stew

I'm guessing on the "roast ... stew" part: a "salmis" is a stew made from road pieces of meat.

Er... That should read \"roaST pieces of meat\", though I guess it would also be possible to make the stew with roadkill...
