This comes in a paragraph relating to the protection of existing equipment on site:
La protection des lèchefrites sera assurée par polystyrène et Novopan ou contreplaqué. Elle devra être maintenue en place en parfait état jusqu'à l'achèvement complet des travaux du Contractant et être renforcée sous chaque pied d'échafaudage ou autre élément en appui (plaques de répartition des charges).
Les lèchefrites seront protégées par le Contractant du lot lèchefrites, à la demande du Maître d'Oeuvre. Les protections sont à charge du lot lèchefrites.
I know of "lèchefrites" as a drip pan when used in your oven, I can imagine something similar on site (possibly) but what would be the exact technical term? So far, I've only found info relating to ovens...

From the description, this seems to refer to the protection of grids covering drains or drainage channels - of the kind often used to carry rainwater away from large open areas such as car-parks (open channels with a strong grid over them so cars and supermarket trolleys etc. can pass over them).
The best translation in English may depend on their form/shape.

Metal pans?
Lots of gHits for grill pans etc as you say but I found this term used on this building materials site. It is in relation to ceilings...but thought it might be worth considering. It appears quite a long way down in the list

"Recovery pan" has certainly been used in translations before, FWIW:
In five cases, on the floor of the RECOVERY PAN of the rail cars (surfaces of about 300 cm2) with maximum contaminations of up to 13,000 Bq/cm2 have been identified." Such a surface adds up to about 4,000,000 Bq! In 1998, two more cases of contaminations of the rail car floor up to 10,000 Bq/cm2 have been noted (see figures of the month for details).
