It is pearl barley, I would say. Please see link below for barley pilaff!

Thank you, your glossing is better! And yes, orge is barley: http://dictionary.sensagent.com/orge/fr-en/

If you mean orgetto as a new word, it is used and to me it seems a cloning of risotto for barley: it also sounds so refined, of course!

Comment: "I think this is barley. However, since this seems to be a new word, I have also used it in English for this menu."

barley broth with vegetables
Is the only think I can think of - based on the Italian "orzetto", which is a sort of barley broth/risotto, and the fact that orge is barley in French. "Orgeat" is a syrup made from barley and almonds apparently. I can only think it may be derived from this.
Good luck!

Sorry, I meant to say "orzotto" for the Italian.

: Exactly the way I was thinking, but I'm not sure about the 'broth' bit; // A yes, something along the lines of risotto, that's exactly what I had in mind! Don't know that I'd call that 'broth', though, JO notwithstanding

Interestingly enough Jamie Oliver made a "barley broth" to accompany a game dish he was doing on his programme this week and it was a soupy risotto-type consistency - he'd thickened it with beurre manié

: Yes, I do agree with Tony, my impression, also.
