I had found 'model' for 'maquetter', but that didn't tell me what 'callflows' means - however, I am now wondering if 'plot' is in fact a better translation for 'maquetter', in this context.

Well, I don't know about this particular context, but given that 'maquette' in graphics terms means a page layout, and often a MASTER page layout, I would assume this to mean setting up some sort of 'diagram' or 'template' for the way calls are being handled; perhaps a 'flow chart' would be most appropriate, even though it would mean repeating the word 'flow'. I guess it really depends on the exact format that is used!

I feel sure you\'re right to translate \'modeliser\' as \'to model\' --- and clearly a distinction is being made here, though I\'m not entirely sure about \'plot\', since I would have expected a different word for this in French; but I\'m no expert here!
