Since we are talking about Yamaha Piano manual here, this means that one of the sound effects of the Yamaha Piano is pipe or an organ (playing instruments), i.e. if you switch to that mode, the yamaha piano will sound like pipe or an organ.

On a Yamaha electronic piano, you can swith to different sound styles (effects). One on them imitates the sound of a pipe organ. This is a type of organ, usually built into churches etc., which makes it's sound by blowing air through different pipes. I have one of these pianos.

imitating the sound of a pipe organ
Pipe organ effect means that your synthesizer somehow emulates the sound of a pipe organ. The problem is (simplified), that in a pipe organ sounds are created by manny differnt pipes playing together. This gives it a 'full' sound. In your electronic synthsizer this normally does not work, because the parallel voices are all exactly in synch and don't have the slight natural imperfections of a physical devices. You can make your sound louder, but not fuller. The trick is to somehow introduce tiny imperfections to make it sound more natural.
